Most, if not all, of these ingredients are easily accessible for most people.
- Eggs and Egg Whites. This serves as the base of this breakfast casserole recipe providing both protein and healthy fats while binding all of the ingredients together.
- Veggie Medley. Because this is a pizza inspired breakfast casserole, I added bell peppers, onion, mushrooms, and spinach.
- Turkey Sausage. Instead of ground pork sausage, I opted for well seasoned ground turkey, which gives me that sausage flavor but with more protein and less calories per serving.
- Pizza Sauce. Okay, this is my favorite addition to this recipe because it brings out the pizza flavor while making the casserole super moist!
- Turkey Pepperoni. It’s not a pizza inspired breakfast bake without pepperonis! I opted for uncured turkey pepperoni.
- Ground Flax and White Beans. These are my secret ingredients to sneak in more fiber without altering the taste and texture.
How To Make This Breakfast Bake
Although this recipe may seem complex because of the lengthy ingredient list, it’s actually super easy.
- Step 1: Cook the veggie/turkey meat mixture. Saute the veggies. Then, add the ground turkey and spices and cook until done.
- Step 2: Mix the egg mixture. Into a mixing bowl, whisk together the eggs, egg whites, pizza sauce, ground flax, and spices. Then, stir in the spinach, beans, and turkey pepperoni.
- Step 3: Add the meat mixture to the bottom of a 9×13 baking dish. Spread it out evenly. Then, pour the egg mixture over top. Bake for 40 minutes.

Why Add Beans and Ground Flax to a Breakfast Bake?
Okay – I know it may seem wild to add white beans and ground flaxseeds to a breakfast casserole dish, but hear me out. Both ingredients have a very neutral flavor and soft texture. This means they don’t affect the end result of the dish.
My goal when creating healthy meal prep recipes for y’all is to help you find ways to boost fiber, protein, and nutrients without sacrificing on flavor. White beans are a great source of fiber while also contributing additional plant-based protein. Their flavor is mild enough that they take on the savory pizza flavors around them.

For the Turkey Sausage:
- 1 lb Ground Turkey 93% lean
- 1 tsp EACH of sea salt, paprika, garlic powder
- 1/2 tsp EACH of Dried Sage, Dried Thyme, Onion Powder, Black Pepper, Red Pepper Flakes
For the Breakfast Bake:
- 1 Tbsp Avocado Oil
- 1 Red Bell Pepper, diced
- 1 Green Bell Pepper, diced
- 1 Red Onion, chopped
- 1 C. Mushrooms, sliced
- 10 Eggs
- 2 C. Egg Whites
- 1 C. Pizza Sauce
- 4 Tbsp Ground Flaxseeds
- 1 tsp Garlic Powder
- 1 tsp Italian Seasoning
- 1/2 tsp Sea Salt
- 1 C. Spinach, chopped
- 1 C. White Beans, drained and rinsed
- 1/2 C. Uncured Turkey Pepperoni, sliced
- Optional Sides: arugula and berries
Instructions
- Preheat oven to 375 F. Grease a 9×13 baking dish. Set aside.
- Into a large skillet over medium heat, add 1 Tbsp of avocado oil along with the chopped bell peppers and onion. Saute for about 5-10 minutes then add the sliced mushrooms and continue to saute until onions are translucent.
- Then, add the ground turkey to the skillet and continue to cook until turkey is done. Once it's done add the turkey sausage seasonings and continue to cook for 5 more minutes making sure everything is coated with the seasonings. Turn off the heat once done.
- In a large mixing bowl, add the eggs, egg whites, pizza sauce, ground flax, 1 tsp garlic powder, 1 tsp Italian seasoning, and 1/2 tsp sea salt. Whisk until fully combined. Then, stir in the spinach, beans, and turkey pepperoni.
- Add the cooked ground turkey/bell pepper mixture to the bottom of the baking dish first then pour the egg mixture evenly over top. Bake the dish for 40 minutes or until the eggs are fully set. Let cool for at least 10 minutes for slicing and serving. Let cool completely before transferring to meal prep containers.
