These cottage cheese pancakes are soft, flavorful, and packed with 27g of protein per serving! They’re extra filling and perfect for on-the-go breakfast meal prep. Plus, the whole family will love them! Best of all, it’s as simple as tossing all of the ingredients into a blender or food processor to blend and then frying them up in a pan. And, did I mention that they’re also healthy and gluten free?! Winning!

Cottage Cheese Pancakes Ingredients

  • Cottage Cheese: The star of the show! This adds moisture and fluffiness to the pancakes while also dramatically bumping up the protein content to ensure you stay full and energized all morning long.
  • Rolled Oats: These will act as the “flour” for the pancakes since we’re not using traditional flour. It’s also a great way to increase the fiber content.
  • Banana: Instead of using a sweetener, I like to use a mashed banana in this recipe. It also gives added moisture and provides your body with extra nutrition, such as potassium, Vitamin C, and Vitamin B6 (as well as extra fiber!).
  • Eggs: This serves as a binding agent to hold everything together. It also helps to bump up the protein and healthy fat content to keep you full and satisfied.
  • Added Flavors: I like to add in a splash of vanilla extract and a dash of cinnamon to boost the flavor profile of these pancakes.
  • Baking Powder: This acts as a leavening agent to yield fluffier pancakes!
  • Milk: Add a splash of almond milk for a thinner consistency.

How to Make These Cottage Cheese Pancakes

  • Step 1 – Blend: Add all ingredients to a blender or food processor and blend for about 30 seconds (be careful not to over blend). I like to use a food processor because it’s easier to remove the batter after blending. Let batter sit for about 5 minutes to thicken. Batter should be pretty thick.
  • Step 2 – Cook: Heat a large skillet or griddle over low-medium heat. Add non-stick spray or oil. Once oil is heated through, scoop out 1/4 C. of the pancake batter and spread evenly onto the pan in a circular shape. Once you see a few bubbles start to form and the bottom is firm, flip the pancake and continue cooking on each side until it reaches your preference of golden brown. Repeat this process until all of the batter is gone.
  • Step 3 – Enjoy: Add your favorite healthy toppings, such as fresh berries, yogurt, nut butter, pure maple syrup, etc. and enjoy!

How To Store These Pancakes for Meal Prepping

These cottage cheese pancakes are perfect for meal prepping! Here’s how to store them for best results.

  • Refrigerator: Store these pancakes in your meal prep containers or in an airtight container in the fridge for up to 5 days. Reheat in the microwave or on the stovetop in a warm skillet.
  • Freezer: Store these pancakes in a large ziplock bag in the freezer for up to one month! When ready to consume, let them defrost in the fridge overnight then reheat as stated above.

Tips and Common Questions

  • Why aren’t my pancakes fluffy? If your pancakes aren’t fluffy, it’s because you blended them for too long. You should blend them for 30 seconds max.
  • Can I substitute the rolled oats with oat flour? Yes! But, only use 1/2 C. of oat flour instead of 1 cup.
  • Can I substitute the cottage cheese? Since this is the star of the recipe, I wouldn’t recommend substituting it. However, you can make a 1:1 substitute with greek yogurt; however, it will change the flavor profile and texture a bit.

Ingredients
  

  • 1 C. Old Fashioned Rolled Oats
  • 1 C. Low Fat Cottage Cheese
  • 2 Eggs
  • 1 Medium Ripe Banana
  • 2 tsp Baking Powder
  • 1/2 tsp Cinnamon
  • 1/2 tsp Vanilla Extract
  • 1-2 Tbsp Optional: Almond Milk (or any type of milk for thinning out consistency)
  • Optional Add-Ins: Raw Honey, Chocolate Chips, Chopped Nuts
  • Optional Toppings: Maple Syrup, Nut Butter, Yogurt, Fresh Fruit

Instructions
 

  • Add all ingredients to a blender or food processor.

  • Blend for maximum 30 seconds to combine the ingredients. Be careful not to over blend or the pancakes won't be fluffy.

  • Heat a large skillet or griddle over low-medium heat. Spray with non-stick spray or add oil. Let heat through. Add 1/4 C. of the pancake batter to the skillet and spread evenly onto the skillet using the back of a spoon. Once it starts to bubble and the bottom is firm, flip and cook the other side. Continue cooking each side until it yields a golden brown color. Repeat this process until all of the batter is gone. This should yield you 8 pancakes (4 pancakes is one serving).
  • Adding your favorite toppings and enjoy!
