How to Make Loaded Burger Protein Bowls
Step 1: Roast the Potatoes
Cube the potatoes, toss with avocado oil and seasonings, then roast until golden brown and crispy.
Step 2: Cook the Beef
Brown the lean ground beef in a large skillet. Season well with garlic powder, onion powder, smoked paprika, salt, and pepper. Cook until no longer pink.
Step 3: Make the Burger Sauce

For the Potatoes:
- 24 oz Baby Potatoes, halved or quartered
- 1 Tbsp Avocado Oil
- 1 tsp EACH of Sea Salt, Garlic Powder, Paprika, Dried Oregano
- 1/2 tsp Onion Powder
- 1/4 tsp Black Pepper
For the Beef:
- 2 lbs 93% Lean Ground Beef (can also use ground turkey or ground chicken)
- 2 tsp Sea Salt
- 2 tsp Italian Seasoning
- 1 tsp EACH of Garlic Powder, Onion Powder, and Paprika
- 1/2 tsp Black Pepper
Toppings:
- 2 C. Cherry Tomatoes, halved
- 1 C. Pickles, sliced
- 1 Red Onion, chopped
- Optional Additional Toppings: sauerkraut, shredded cheese, lettuce
Burger Sauce:
- 3/4 C. Plain Non-Fat Greek Yogurt
- 3-4 Tbsp Ketchup
- 1 Tbsp Mustard
- 1-2 tsp Pickle Juice or Apple Cider Vinegar
- 1/2 tsp Garlic Powder
Instructions
For the Potatoes:
- Preheat oven to 425 F. Line a baking sheet with parchment paper.
- Add all potato ingredients to a mixing bowl and toss until potatoes are fully coated with the seasonings.
- Spread potatoes evenly onto the baking sheet and roast for about 25-30 minutes or until fork tender.
For the Beef:
- In a large skillet over medium heat, brown the beef.
- Add the seasonings. Set aside to cool.
For the Sauce:
- Whisk all sauce ingredients together in a bowl. Set aside.
Assembly:
- Into each meal prep container, layer in the ground beef, roasted potation, tomatoes, onion, and pickles.
- Pre-portion out 2 Tbsp of the burger sauce into sauce cups.
- Store in the fridge for up to 5 days.
- When ready to serve, you can reheat in the microwave, oven, convection oven, air fryer, or portable lunchbox oven. I heat the toppings as well, but you don't have to. Once it's heated, drizzle the burger sauce over top, mix, and enjoy! (you can add lettuce, sauerkraut, etc. as well after heating).
