How to Make BBQ Ranch Chicken Power Bowls
Step 1: Bake the Chicken
Season the chicken generously before baking until tender and juicy. Toss it with your favorite gluten-free BBQ sauce once fully cooked. I like the BBQ sauce from the Primal Kitchen brand.
Step 2: Roast the Potatoes
Season and roast the baby potatoes until fork tender. This adds a layer of savoriness to the bowls plus provides a complex carb to increase fullness.
Step 3: Saute the Veggies
In a skillet, saute the bell pepper, onion, and corn until tender. Feel free to add some black beans for a fiber boost.
Step 4: Make the BBQ Ranch Sauce
Whisk together plain greek yogurt (protein boost), BBQ sauce, and ranch seasoning for a major flavor booster to these power bowls.
Step 5: Assemble the Meal Prep Containers
I like to pre-portion out 5 individual servings for a grab and go lunch throughout the week. You can layer each container with the BBQ chicken, roasted potatoes, sauteed veggies, and then drizzle the BBQ Ranch sauce over top when ready to serve!

Storage Instructions

For the Roasted Potatoes:
- 24 oz Baby Potatoes, halved
- 1 Tbsp Avocado Oil
- 1 tsp EACH of Sea Salt, Garlic Powder, Paprika, Dried Oregano
- 1/2 tsp Onion Powder
- 1/4 tsp Black Pepper
For the Chicken:
- 2 lbs Chicken Breasts, cut into small cubes
- 1 tsp EACH of Sea Salt, Garlic Powder, Italian Seasoning, and Paprika
- 1/2 tsp Onion Powder
- 1/4 tsp Black Pepper
- 1/2 C. BBQ Sauce (I like the Primal Kitchen one)
For the Sauteed Veggies:
- 1 Tbsp Avocado Oil
- 2 Bell Peppers, chopped (any color)
- 1 Red Onion, chopped
- 1 C. Corn, drained and rinsed
- Sea Salt, Pepper, Garlic Powder, to taste
BBQ Ranch Sauce:
- 1/2 C. Plain Non-Fat Greek Yogurt
- 2 Tbsp BBQ Sauce
- 1 Tbsp Ranch Seasoning
- 1 Tbsp Water
Instructions
For the Roasted Potatoes:
- Preheat oven to 425 F. Line a baking sheet with parchment paper.
- Add all potato ingredients to a mixing bowl and toss until potatoes are fully coated with the seasonings.
- Spread potatoes evenly onto the baking sheet and roast for about 25-30 minutes or until fork tender.
For the Chicken:
- Cut the chicken breasts into small 1-inch cubes. Season with seasonings (not including the bbq sauce).
- In a skillet over medium heat, add the chicken along with a splash of water, cover with a lid, and cook until done (stirring occasionally to cook evenly on all sides).
- Once the chicken is fully cooked through, remove the lid, and continue cooking until any excess liquid (from the water) has evaporated. Then, stir in the BBQ sauce and transfer the chicken to a bowl and set aside.
For the Veggies:
- In the same skillet, add all of the sauteed veggie ingredients.
- Saute until onions are translucent and bell peppers are fork tender.
For the BBQ Ranch Sauce:
- Add all sauce ingredients to a bowl and whisk to combine.
Assembly:
- Layer each meal prep container in this order for maximum freshness – BBQ chicken, roasted potatoes, sauteed veggies.
- Transfer the sauce into sauce cups and drizzle it over the bowls when ready to serve (after heating the bowls up). One serving of the sauce is equal to 2 Tbsp.
Notes
- Containers. These are the glass meal prep containers I use for these power bowls.
- Macros. The macro count includes one bowl plus 2 Tbsp of the sauce.
- BBQ Sauce. I like the Primal Kitchen sauce. It’s very “clean” with minimal ingredients. But, any BBQ Sauce works with this recipe.




This was delicious. Since I wasn’t able to find the Primal Kitchen BBQ sauce, I substituted with Unsweetened Sweet Baby Ray’s BBQ Sauce. I will definitely keep this in rotation.
