How to Make This Pasta Salad
This high protein chickpea pasta salad is actually very easy to make.
- Bake the Chicken. Season the chicken breasts to your liking and bake until done. Then, shred it up.
- Boil the Noodles. Cook the noodles according to the package instructions. Drain and rinse with cool water.
- Assemble the Salad. Add all salad ingredients to a large salad bowl along with the lemon herb dressing and toss to combine.

Variations and Substitutions

- Pasta Noodles. I like to use fusilli noodles, but rotini and elbow noodles work great too.

High Protein Chickpea Pasta Salad (meal prep)

For the Chickpea Pasta Salad:
- 10 oz Gluten Free Fusilli Pasta I used chickpea pasta
- 1.5 lbs Chicken Breasts
- 1 15 oz Can of Chickpeas, drained and rinsed
- 2 C. Spinach, chopped
- 1 Cucumber, diced
- 1 pint Cherry Tomatoes, halved
- 1 Orange Bell Pepper, chopped
- 1/2 Red Onion, chopped
- 1/2 C. Kalamata Olives, halved
- 1/4 C. Sunflower Seeds
- 1/4 C. Parsley, chopped
- Sea Salt and Pepper, to taste
- 1/2 C. Crumbled Feta Cheese optional
For the Creamy Lemon Herb Dressing:
- 1 C. Plain Greek Yogurt
- 6 Tbsp Extra Virgin Olive Oil
- 2 Lemons, juice only
- 2 tsp Dijon Mustard
- 2 tsp Raw Honey
- 2 tsp Italian Seasoning
- 2 Garlic Cloves, minced
- 1 tsp Garlic Powder
- 1/2 tsp Onion Powder
- Sea Salt and Pepper, to taste
Instructions
- Make the Dressing. Add all dressing ingredients to a bowl and whisk until fully combined. Set aside.
- Boil the Noodles. Cook the noodles according to the package instructions. For gluten free noodles, I usually cook them a bit longer than recommended so they'll be extra soft like regular wheat noodles. Once done, drain and rinse with cold water.
- Cook the Chicken. Season the chicken breasts to your liking. I used sea salt, pepper, garlic powder, onion powder, paprika, and poultry seasoning. To keep the chicken super moist, add a splash of water to the baking dish and cover with a lid. Bake at 375 F. for 35-45 minutes or until the chicken is fully cooked through. Once done, let it cool for a few minutes and then shred it with a fork.
- Assemble the Salad. Once everything is cooked and chopped, add all salad ingredients to a large salad bowl. Pour the dressing over top and toss until everything is fully combined. Do a taste test to see if it needs more sea salt and pepper.
- Transfer to Containers. I like to pre-portion out our servings into these glass jars. This high protein pasta salad recipe makes 8 servings, which will feed my husband and I for 4 days (lunch prep).
- Before Consuming. This pasta salad tastes best when you let it sit at room temperature for about 10 minutes after removing it from the fridge. This gives the dressing time to "melt" a bit, which makes it more creamy.
