I think you’ll be surprised at just how easy it is to make this carrot salad recipe. With the right tools, all you need is about 15 minutes in the kitchen.
- Make The Ribbons. Using a vegetable peeler, peel the carrots and cucumbers length-wise into long ribbons.
- Make The Dressing. Add all the dressing ingredients to a mixing bowl and whisk until combined. Add water to thin out the consistency to your liking.
- Assemble The Salad. Add all salad ingredients to a large salad bowl. Pour the dressing over top. Toss this carrot ribbon salad fully combined.
- Serve. I like to let the salad marinate in the dressing for about 30 minutes before serving for the best flavor. Serve as is or with a side of avocado slices and enjoy!

- 4-6 Tbsp Water, to thin out consistency
- Sea Salt and Pepper, to taste
Instructions
- Defrost Edamame: Go ahead and rinse the frozen edamame with cool water using a strainer and then allow them to defrost while prepping the salad.
- Make The Ribbons: Using a vegetable shaver/peeler, shave the carrots and cucumbers into ribbons.
- Make The Dressing: Add all dressing ingredients to a bowl and whisk until fully combined. Add 4-6 Tbsp of water to thin out the consistency to your liking (I added about 4 tbsp).
- Assemble The Salad: Add all salad ingredients to a large salad bowl. Pour the dressing over top and toss to combine.
- Serve: For the best flavor, let the salad marinate in the dressing for about 30 minutes before serving.
Notes
- Storage: This salad will stay good in the fridge for up to 3 days.
- Tip Before Eating: Remove the salad from the fridge about 10-15 minutes before serving to allow the dressing to come to room temperature. It does solidify in the fridge.
