This overnight oats recipe is clean and simple yet tasty and full of delicious Fall flavors. Here’s what you’ll need…
- Rolled Oats. The base of this recipe is rolled oats. Oats are a healthy carb that has a good amount of fiber helping to keep blood sugar levels steady while naturally boosting energy.
- Chia Seeds. I like to add chia seeds to sneak in healthy fats and fiber while giving the overnight oats a thicker texture.
- Yogurt. In today’s recipe, I’m using Greek Yogurt to boost the protein content, but you can also use dairy free yogurt.
- Milk. Today, I’m using oat milk, but any type of milk works with this recipe.
- Protein Powder. My favorite protein powder to add to any recipe is collagen or bone broth protein. This boosts the protein content while adding extra health benefits for your hair, skin, nails, joints, etc.
- Pumpkin Puree. The pumpkin adds extra creaminess and flavor.
- Fall Spices. To give it that Fall vibe, I’m adding pumpkin spice, vanilla, and cinnamon.

How To Make Overnight Oats
The best part about overnight oats is that it only takes about 10 minutes to put together and the rest is just letting it thicken and marinate in the fridge, which is why it’s so great for breakfast meal prep.
- Step 1 – Mix Ingredients. Add all of the overnight oats ingredients to a large bowl and mix until fully combined.
- Step 2 – Marinate. Place in the fridge to thicken and marinate. After a couple of hours, I like to mix again to avoid any clumps.

Substitution Ideas and Meal Prepping Tips
- Dairy Free. To keep these overnight oats dairy free, opt for plant-based milks and substitute the greek yogurt with dairy free yogurt.
- Sweetener. Opt for natural sweeteners, such as maple syrup, raw honey, or monk fruit as a lower carb option.

- Glass Storage Jars with Lids (optional for meal prepping)
Ingredients
- 1/2 C. Rolled Oats
- 1/2 C. Greek Yogurt (or dairy free yogurt)
- 1/2 C. Plant Based Milk (I used oat milk)
- 1/3 C. Pumpkin Puree
- 2 Tbsp Bone Broth Protein Powder (or collagen peptides)
- 1 Tbsp Chia Seeds
- 1 Tbsp Pure Maple Syrup
- 1/2 tsp Pumpkin Spice
- 1/2 tsp Cinnamon
- 1/2 tsp Vanilla Extract or Powder
Instructions
- Add all ingredients to a bowl or container and mix until fully combined. After about 20 minutes, mix again to avoid clumps.
- Cover and place in the fridge until ready to serve.
- For Meal Prepping: I like to pre-portion out individual servings using these jars for a quick grab-and-go breakfast.
- For Toppings: Feel free to add toppings, such as dairy free whipped cream, chopped pecans, etc.
