- 2 (15 oz cans) of Chickpeas, drained and rinsed
- 1.5 C. English Cucumber, chopped
- 1 C. Red Bell Pepper, chopped
- 1 C. Cherry Tomatoes, halved
- 1/2 C. Kalamata Olives, halved
- 1/3 C. Red Onion, chopped
- 1/4 C. Fresh Parsley, finely diced
- 4 oz Feta Cheese (or dairy free crumbled cheese)
- Sea Salt and Pepper, to taste
For the Lemon Vinaigrette Dressing:
- 1/3 C. Extra Virgin Olive Oil
- 1/4 C. Lemon Juice
- 1 tsp Dijon Mustard
- 1 tsp Raw Honey
- 1/2 tsp Garlic, minced
- 1/2 tsp Sea Salt
- 1/4 tsp Black Pepper
Instructions
- Make the Dressing: Add all dressing ingredients to a measuring cup and whisk to combine.
