Ingredients

  • 1ย Largeย Sweet Potato,ย peeled and cubed
  • 2ย Tbspย Avocado Oil, Coconut Oil, or Grass-fed Ghee
  • 1/2ย Jalepeno Pepperย de-seeded and chopped
  • 1/2-1ย Whole Bell Pepperย de-seeded and chopped
  • 1/2ย Small Purple Onionย chopped
  • 2ย Garlic Clovesย minced
  • 1ย lbย Grass-fed Ground Beef
  • 1ย Packetย Organic Taco Seasoning (or 2-4 Tbsp, to taste)
  • Optional Toppings: Lime Juice, Cilantro, Avocado, Organic Sour Cream, etc.

Instructions

  • Add 1 Tbsp of cooking oil to a skillet over medium-high heat along with the cubed sweet potato. ย Keep in mind, the smaller the cubes, the faster itโ€™ll cook. ย Stir to coat all of the cubes with the oil. ย Cover skillet with a lid to cook faster. ย Halfway through cooking, add a splash of water to create some steam and cover with a lid again. ย Continue to stir potatoes throughout cooking to avoid burning. ย Remove from stovetop once the potatoes are soft. ย **The potatoes may get a little mushy, which is completely fine because weโ€™ll be mixing it in with the beef mixture anyway.
  • In a separate skillet (while the potatoes are cooking), add 1 Tbsp of cooking oil over medium-high heat along with the chopped jalepeno, bell pepper, and onion. ย Saute until soft. ย Cover skillet with a lid to cook faster. ย Once theyโ€™re slightly soft, add in the minced garlic and saute a few more minutes.ย
  • Then, add in the ground beef and cook until beef is browned. ย Once browned, add the taco seasoning and stir to combine.
  • Once the beef mixture is done, transfer the sweet potatoes to the skillet with the beef and stir to combine. ย
  • To serve, keep the mixture in the skillet and adding your favorite toppings (i.e. avocado, lime juice, cilantro, organic cheese, etc.). ย If youโ€™re paleo, you can eat with some of the Siete Grain Free chips (so good!).

This sweet potato taco skillet was so yummy! I doubled almost all the ingredients and yet it was very small portions for 5 containers. However, just grab some Siete paleo chips, I suggest the lime flavored, and this becomes a delicious meal that I could eat repeatedly. Full disclosure, I did freeze about half of them and they still turned out great after they thawed. Very excited to try the next recipe!
