Ingredients

For the Crust:

  • 1 1/4 C. Almond Flour, loosely packed
  • 2 Tbsp Taco Seasoning
  • 2 Eggs, whisked
  • 1 Tbsp Coconut Oil or Ghee, softened

For the Beef Filling:

  • 1 lb Ground Beef
  • 2.5 Tbsp Taco Seasoning (or 1 packet)
  • 1/2 Yellow Onion, chopped
  • 1 Bell Pepper, de-seeded and chopped
  • 1/2 C. Tomato Sauce
  • 1/2 C. Diced Tomatoes, drained

Instructions

  • Preheat oven to 350 F. In a mixing bowl, add all crust ingredients and mix until fully combined. Use your hands to form the mixture into a tight ball. Grease a pie dish with oil. Then, press the crust onto the dish and continue to spread the crust mixture all the way out to the edges of the dish (about 1/4 inch thickness). Bake pie crust for 10-12 minutes.
  • For the filling, in a large skillet over medium heat, add the ground beef and cook until it's about halfway done. Then, add the taco seasoning. Mix to combine. Next, add the chopped onion and bell pepper. Continue cooking until the beef is fully browned. Lastly, add the tomato sauce and stir to combine.
  • Transfer the beef mixture to the pie dish (on top of the cooked pie crust). Press it firmly into the dish. Top with diced tomatoes. Bake dish for 15-20 minutes.
  • Once done, let cool for 10 minutes. Then, add any paleo friendly topping, including avocado slices, cilantro, etc.
