This easy, healthy one pot dinner makes for the perfect weeknight dinner when you only have a few minutes to put something together. Best of all, it’s made with gluten free noodles and can easily be made dairy free with a few substitutions.

Turning any type of pasta-based dish into a gluten friendly meal can be tricky. This is because not all gluten free pasta noodles are the same. For this Lasagna Soup Recipe, I recommend opting for gluten free lasagna noodles that are made with corn flour, brown rice flour, or a mixture of both for the best texture.

But, the best part about making this Lasagna Soup Recipe is that you get all the flavors of traditional lasagna without all the labor of prepping each individual layer of lasagna – which takes lots of time! You also don’t have to worry about broken lasagna noodles because with this healthy soup recipe, you actually want to break up the noodles.

Lasagna Soup Ingredients

To make this gluten free Lasagna Soup, you’ll need a few ingredients – many of which you may already have in your pantry.

  • Ground Meat Blend. To make this lasagna soup higher in protein, I’m opting for ground turkey and ground Italian sausage. You can also use ground beef instead of ground turkey, but don’t skip on the Italian sausage! It gives extra flavor and is essential for that traditional lasagna taste.
  • Gluten Free Lasagna Noodles. Opt for gluten free noodles that use corn flour or brown rice flour or a mixture of both for the best texture. For the highest quality ingredients, use Jovial Lasagna Noodles. For the best texture, use Barilla Lasagna Noodles.
  • Yellow Onion and Garlic. Adds depth of flavor!
  • Marinara. My favorite, flavor-rise, is the Rao’s brand.
  • Diced Tomatoes. Essential for turning this traditional dish into a soup.
  • Spice Blend. A blend of Italian herbs and spices to boost flavor.
  • Chicken Broth. Essential for making this a soup recipe.
  • Spinach. To add a boost of color, fiber, and nutrients.
  • Ricotta Cheese. Top it off with ricotta cheese to really give it that lasagna flavor. Substitute with dairy free ricotta to keep this lasagna soup recipe gluten and dairy free.

How to Make Gluten Free Lasagna Soup

  1. Saute the Onion and Garlic. Into a large soup pot, add some avocado oil and saute the onions until translucent. Add the minced garlic and saute another 1-2 minutes.
  2. Brown the Meat. Add in the ground turkey and Italian sausage and cook until fully browned.
  3. Add Remaining Ingredients. Add in all remaining ingredients, except the noodles and ricotta, including the spice blend, marinara, diced tomatoes, and broth. Simmer for 10 minutes.
  4. Add the Noodles. Roughly break up the lasagna noodles, add to the pot, and simmer another 15-20 minutes.
  5. Adding Toppings. When ready to serve, top it off with a dollop of ricotta cheese and enjoy!

For Meal Prepping and Freezing

For Meal Prepping: If you plan on making this soup ahead of time, I recommend not adding the noodles until ready to serve. Cook the soup according to the instructions and just leave out the noodles. When ready to serve, break up the noodles and cook them according to the package instructions. Drain them and then stir them into the soup before serving.

For Freezing: You can freeze this soup with or without the noodles. For the best texture, I recommend freeze the soup without the noodles and then cooking the noodles fresh before serving.

  • Noodles. If you’re not sensitive to gluten, feel free to use regular wheat pasta noodles.
  • Spinach. You can also use chopped kale instead of spinach.
  • Cheese. Opt for dairy free ricotta if you want to keep this soup recipe dairy free.

Ingredients
  

  • 1 Tbsp Avocado Oil
  • 1 Yellow Onion, chopped
  • 2 tsp Garlic, minced
  • 1 lb Ground Turkey
  • 1 lb Ground Pork Italian Sausage
  • 1 14.5 oz Can of Diced Tomatoes (fire roasted, if available)
  • 2.5 C. Marinara Sauce (I like Rao's brand)
  • 4 C. Chicken Broth
  • 1 Tbsp Italian Seasoning
  • 1 tsp Dried Basil
  • 1 tsp Dried Oregano
  • 1 tsp Garlic Powder
  • 1/2 tsp Sea Salt
  • 1/4 tsp Black Pepper
  • 9 oz Gluten Free Lasagna Noodles, broken into large pieces (see notes for brands I recommend)
  • 1 C. Spinach, roughly chopped
  • Toppings: Ricotta Cheese, Freshly Chopped Basil, Grated Parmesan Cheese

Instructions
 

  • In a large soup pot over medium heat, add the oil and onions. Saute until translucent. Then, add the minced garlic and saute 1-2 more minutes.

  • Next, add in the ground turkey and sausage. Cook until fully browned.

  • Add in the diced tomatoes, marinara sauce, broth, and all of the seasonings. Bring to a boil then reduce the heat to low-medium and let simmer for 10 minutes.

  • Add in the broken up lasagna noodles. Let simmer another 10-20 minutes or until the noodles are fully cooked. Feel free to add more broth if the noodles absorb too much liquid. Once done, stir in the chopped spinach and let it wilt (about 2-3 minutes). Adjust seasonings, if desired.

  • When ready to serve this Lasagna Soup, transfer it to a bowl and top it with a dollop of ricotta cheese, grated parmesan (optional), and freshly chopped basil (optional).

Notes

  • Noodles:  For the gluten free lasagna noodles, opt for one that uses corn flour or brown rice flour for the best texture.  Jovial Noodles are the highest quality while Barilla noodles have the best texture.  Both are great options!
  • Macros:  For this Lasagna Soup, I calculated the macros based on the Jovial Brown Rice Lasagna Noodles.
  • Freezing:  If you plan on freezing this lasagna soup recipe for batch prepping, I recommend waiting to cook the noodles separately right before serving and then stirring them into the soup base.
  • Storage:  This soup will last in the refrigerator for up to 4 days making it great for meal prep.
