Best Egg Salad Recipe

This classic egg salad recipe is my go-to dish for Easter parties and events. And, it’s always a hit! It’s also a great way to use up any leftover hardboiled eggs.

It makes for a super easy, healthy lunch that’s packed with protein, fats, and nutrients. And, you can enjoy it with lettuce wraps, with crackers, as a sandwich, and so much more. My recipe is also packed with delicious fresh herbs and uses avocado mayonnaise to keep it on the healtheir side.

Why You’ll Love This Egg Salad Recipe

My version of egg salad takes a slight twist on the classic recipe I grew up with. In addition to adding more fresh herbs and giving it a pop of lemon flavor, I also like to chop my eggs with a knife rather than mushing them with a fork to give it a more chunky texture. Here are some reason I think you’ll love my take on this classic recipe.

  • Chunky Texture: I like to keep the eggs chunky instead of mushy. So, I chop them with a knife instead of using a fork.
  • Healthier Mayo: I use avocado mayonnaise to keep this egg salad recipe on the healthier side instead of using mayonnaise that’s filled with pro-inflammatory oils, such as soybean oil.
  • Perfect Flavor: With a blend of fresh dill, green onion, and lemon juice, this egg salad is filled with fresh, bright flavors to perfectly enhance the taste of the eggs.
  • Customizable: If you want to switch things up, you can make certain swaps like substituting the green onion with chopped celery or adding in other herbs, such as parsley.

Egg Salad Ingredients

  • Hard Boiled Eggs: Of course, this is the star ingredient. Be sure to hard boil the eggs according to the instructions I give on how to boil the perfect egg here. This method will give you the perfect yellow color for the yolk and ensure you get a perfect peel every time.
  • Mayonnaise: The best option is always homemade mayonnaise if you have time to make it, but I also love Chosen Foods Avocado Mayo. You can also cut the mayo with plain greek yogurt for a lower calorie option.
  • Dijon Mustard: This gives the egg salad a tangy, pepper-y flavor.
  • Red and Green Onion: These give it a pop of color with an extra crunch and flavor that perfectly compliments the other ingredients.
  • Fresh Dill: This add freshness and more flavor to the salad that really brightens it up!
  • Lemon Juice: It doesn’t take much to really give the salad a pop of flavor and round everything out.
