Low Carb Pumpkin Spice Latte Recipe

The Fall temperatures are rolling in down here in Houston, and I’m loving it! One of my favorite things about Fall is sipping on all the delicious, warm drinks while bundled up in a cozy sweater on a beautiful weekend morning. So, I figured I would share with you the healthy, low carb Pumpkin Spice Latte recipe I’ve been making lately and the best part… you can whip it up in less than 3 minutes!

Healthy Pumpkin Spice Latte Recipe

If you’ve been following me on Instagram or YouTube, then you’ll know that we’ve been living in an AirBnB rental for the past 4 weeks waiting on our new house to be built! Yes, it’s very exciting but also stressful because the kitchen is super tiny and only one burner on the stovetop actually works… ummm, yeah, please pray for my nerves right now! Lol.

Needless to say, I’ve been making healthy meals that have minimal ingredients and don’t take long to cook, which is how I came up with today’s Pumpkin Spice Latte recipe. There’s no need for a stovetop or microwave. All you need is a coffee machine and a blender!

Oh, and this Pumpkin Spice Latte recipe is 100% Sugar Free, Low Carb, Vegan, and Paleo friendly… it can actually be used as a meal replacement for breakfast because it’s packed with all the good fats!! 😉 I made it Bulletproof Coffee style and low carb to keep my body in fat-burning mode all morning!

This Pumpkin Spice Latte is low carb, vegan, and keto friendly.

Ingredients

  • 8 oz Organic Coffee, brewed

  • 1/2 C. Full-Fat Coconut Milk (in the can)

  • 2 Tbsp Pumpkin Puree

  • 1 Tbsp MCT Oil or Coconut Oil

  • 1 tsp Pumpkin Pie Spice (or to taste)

  • 1/2 tsp Vanilla Extract

  • Low Carb Sweetener, to taste (I used Monk Fruit. Birch Xylitol & Stevia are also great!)

  • Optional: Top with organic whipped cream or coconut milk whipped cream

Directions

  • Brew your coffee (stronger than usual). I use a Keurig machine so I’m able to make this recipe in less than 3 minutes!
  • Add all ingredients, except the whipped cream, to a blender and blend until smooth and frothy.
  • Pour into your coffee mug, add the whipped cream (optional), and ENJOY!!

    💜 this pumpkin spice latte! I’m having trouble following low carb (had too many problems with keto) & knowing how much fat to consume/day. I absolutely detest macros. Have any pointers u can pass my way to assist me in weight loss? 😱 Much appreciated!! 💕

      Yeah, I’m not a fan of counting macros either. Just focus on every meal having some sort of healthy fat and protein with low-moderate carbs. As long as you feel good, then that’s a sign you’re doing the right thing. Too many people get too caught up in counting macros that they forget to listen to their body.
