Hey Y’all! Today, I’m getting back to my roots and sharing with you my Southern-Style Collard Greens recipe.
Listen… if you turn your nose up to collard greens, then you haven’t tasted true southern-style greens before.
Homemade greens are on another level! In fact, I haven’t been to a restaurant that ever beat my greens in the flavor department…. just saying 😉
Taking my greens to the next ‘healthy’ level…
Not only do my collard greens taste good, but they’re healthy for you too!
Even though taste is very important to me, quality ingredients are even more important (for health, energy, and longevity).
It’s so important to choose high quality ingredients if you want to feel your best.
For instance, choosing uncured, pastured bacon over conventional bacon from factory-farmed cows makes a world of difference in your health.
Additionally, choosing organic greens instead of conventional greens is a good idea to avoid toxic pesticides.
I even like to take it a step further by using apple cider vinegar instead of white vinegar.

Healthy Southern-Style Collard Greens
A healthy southern style collard greens recipe. This recipe is gluten free, low carb, and paleo friendly.
- 1 White or Yellow Onion (chopped)
- 16-18 Slices of Uncured (Pastured Bacon)
- 3-4 Bundles of Organic Collard Greens or about 3-4 lbs (cut & washed)
- 1-2 tsp Fresh Garlic (minced)
- 6 C. Organic Chicken Broth
- 2 Tbsp Apple Cider Vinegar
- Celtic Sea Salt & Black Pepper (to taste)
- Add bacon pieces to a large pot over medium heat and cook until bacon releases most of its fat (stirring occasionally to avoid burning).
- Next, add the chopped onion. Stir to ensure all onion pieces are coated with the bacon fat. Cook until onions are slightly soft and translucent.
- Add the minced garlic and cook 1-2 more minutes.
- Add the chicken broth and bring to a boil. Allow to boil 2-3 minutes then reduce heat down to medium.
- Begin adding your greens to the pot a few handfuls at a time. Allow the greens to cook down before adding the next round of greens. Continue adding the greens a few handfuls at a time and cooking them down until all greens are added to the pot.
- Add the apple cider vinegar, salt, and pepper. Stir to combine.
- Turn heat to low-medium and allow greens to simmer for 2-3 hours for maximum flavor. Stir occasionally.
- Serve with my Grain Free Paleo Cornbread. ENJOY!
